Push cut, rock chop, pull cut
Three ways a blade moves through food. Most people learn one, use it for everything, and quietly blame the knife.

A knife does not cut by being pressed down. It cuts by the edge travelling through the food — some combination of downward force and sideways movement. Which combination works best depends on one thing you can see at a glance: how curved the edge is.
Get the pairing right and a mid-range knife feels excellent. Get it wrong and a superb knife feels like it needs sharpening.
1.The three motions
All three do the same job by different routes. The question each one answers is: how does the edge get sideways movement?
2.Push cut — the Japanese default
The blade goes down and slightly forward in one motion, then lifts clear. The food is separated in a single pass. This is how most Japanese knives are designed to be used.
How it feels when it is right
Quiet. There is no sawing, no repeated pressing, and the board makes one tap rather than a rattle. Slices fall away cleanly instead of staying attached at the bottom.
What it needs
A flat or nearly flat edge. The flatter the profile, the more of the edge lands on the board at once, and the less likely you are to leave that hinge of uncut skin at the end of the stroke. A Nakiri is the extreme case: dead flat, and unbeatable for this.
Best for
Almost all vegetable work — onions, cabbage, peppers, root vegetables. Anything where you want even slices quickly.
3.Rock chop — the European default
The tip stays in contact with the board while the handle rises and falls, rolling the blade forward through the food. Everyone who has watched a cooking programme has seen it: the fast blur over a pile of herbs.
What it needs
A curved belly. Without a curve there is nothing to roll on — try it with a Nakiri and the blade simply slaps the board. This is why French and German chef's knives have deep bellies and why a Gyuto, the Japanese take on that shape, keeps one.
Best for
Herbs, garlic, and anything you want reduced to a fine mince rather than neat slices. It is fast and imprecise, which for parsley is exactly right.
The trade
It is hard on an edge. The blade is repeatedly pressed and rolled against the board, and on a hard Japanese edge that is more contact than it wants. If you rock-chop constantly, a slightly softer European knife is the honest recommendation — or a Gyuto, which is built for it.
4.Pull cut — the one people skip
The blade is placed on the food and drawn backwards, towards you, using the length of the edge like a single long saw stroke without any sawing. It is the least known of the three in home kitchens and the one that solves the most problems.
Why it works
Because the edge is moving sideways across the food, it needs very little downward pressure. Less pressure means less crushing — which is the whole difference between a tomato slice that holds its shape and one that bursts.
Best for
- Soft, skinned things — tomatoes, plums, ripe peaches.
- Raw fish — this is the sashimi cut, and the reason a Yanagiba is long and straight.
- Anything you want thin — cucumber ribbons, carpaccio, delicate slices where the finish shows.
- Herbs you do not want bruised — basil especially. Rocking crushes it and turns it black; a single pull cut does not.
What it needs
Length and a straight profile. The longer the flat section, the longer the stroke, and the fewer passes it takes. A Kiritsuke is superb at this.

Read down the columns and the pattern is clear: flat favours push and pull, curved favours rocking. Every blade profile in a kitchen is one position on that line.
6.The grip that makes it work
All three motions depend on the same grip, and most people are not using it.
The pinch grip. Pinch the blade — thumb on one side, the knuckle of your index finger on the other, just in front of the handle — and wrap the remaining three fingers around the handle. Your hand is now holding the knife where its balance is, not at the far end of a lever.
Holding the handle like a hammer, with all four fingers behind the bolster, gives you far less control and forces you to use your wrist for everything.
The other hand matters as much. Curl your fingertips under so the knuckles face the blade, and rest the flat of the knife against those knuckles. The knuckles become a guide: the blade slides up and down them, cannot reach your fingertips, and slice thickness is set by how far you move that hand between cuts.
This is where blade height earns its keep — a taller blade, like a Nakiri, gives your knuckles room to sit against without your grip feeling cramped.
7.What goes wrong
- Rocking a flat blade. The most common mismatch. Nothing rolls, the blade slaps, and you conclude the knife is bad. It is the motion that is wrong.
- Pressing instead of moving. If you find yourself leaning on the knife, add sideways travel — push further forward, or pull further back. Pressure crushes; travel cuts.
- Sawing back and forth. A serrated bread knife saws. A smooth edge should pass through in one direction per stroke; sawing tears the food and does the edge no favours.
- Lifting the blade fully clear every time for fine work. For mincing you can leave the tip down and use it as a pivot — that is what the tip is for.
- Blaming sharpness. Before sharpening, try the other motion on the same ingredient. Often the knife was fine.
8.The short version
Push cut for most vegetable prep, and for most of what a Japanese knife is built to do. Rock chop for herbs and mincing, on a blade with a curve. Pull cut whenever the food is soft, thin or precious — it is the motion most home cooks never learned and immediately notice.
And a pinch grip under all three, because none of them work properly held like a hammer.
