Sharpening and care, steel by steel
What a whetstone actually does, why the burr matters more than the angle, and how care changes depending on what your blade is made of.

A knife is the only tool in your kitchen that gets worse every time you use it, and better only if you do something about it. Most people buy well and then let the thing quietly decline for years.
This is the whole of it: how to tell when to sharpen, how to do it, and how the answer changes depending on the steel you own.
1.Know your steel before anything else
Every care decision follows from one question: does your steel rust? Everything else is detail.

That last row causes real confusion. A San Mai knife with a stainless jacket and an Aogami core looks stainless, behaves stainless across the flat of the blade, and still needs drying — because the one part that touches food, the edge, is carbon.
2.Hardness — and what it changes on the stone
Japanese kitchen knives sit around 60–63 HRC. European ones sit around 54–58. Two consequences follow, and both matter here.
- They hold an edge much longer. You sharpen far less often than you would a European knife.
- They chip instead of rolling. A soft edge deforms and can be pushed straight again with a steel. A hard edge breaks off a tiny piece, and the only fix is to grind metal away until the chip is gone.
This is why a ribbed honing steel — the rod that comes with European knife blocks — is the wrong tool here. It is designed to straighten an edge that bends. A hard Japanese edge does not bend; it chips.
3.When to sharpen — three honest tests
- The tomato test. Rest the blade on the skin of a ripe tomato and draw it back without pressing at all. Sharp: it sinks in under its own weight. Dull: it skates, then bursts the skin.
- The paper test. Hold a sheet of printer paper by one corner and slice down through it. A sharp knife cuts a clean line silently. A dull one tears, catches, or folds the paper over.
- The onion test. If you have started crying more than you used to, the edge is crushing cells instead of severing them. That is a dull knife, not a strong onion.
For a home kitchen, a full sharpening once or twice a year is normal. If you find yourself doing it monthly, something else is wrong — usually a glass board, a dishwasher, or bones.
4.The angle
Japanese double-bevel knives are ground at roughly 15° per side. European knives sit nearer 20°. That difference is the whole reason a Japanese knife feels the way it does — and the reason it is less tolerant of abuse.
You do not need a protractor. Two stacked coins under the spine puts most kitchen knives close to 15°. Do that once, look hard at the gap, and train your hand to remember it.
A more reliable trick: lay the blade flat on the stone, then lift the spine until you can just slide a matchstick underneath. That is roughly the angle you want, and it scales sensibly with blade width.
5.Grits — what each stone is for
A whetstone is graded by grit: the higher the number, the finer the abrasive. You do not need many.
- #400 and below — only for repairing a chip or reprofiling a badly neglected edge. Removes metal fast. Most people never need it.
- #1000 — the workhorse. This is where the edge is actually created.
- #3000 — refines the scratch pattern left by the #1000 into something that cuts cleanly rather than saws.
- #6000 and above — polish. Makes the edge glide, and looks lovely. Optional, and genuinely noticeable on carbon steel.
If you buy one stone, buy a #1000/#3000 combination. It will handle everything you own.
Two things about stones themselves. Most Japanese water stones need soaking for five to ten minutes first — check what your maker says, because splash-and-go stones must not be soaked. And every stone dishes in the middle with use; a hollow stone rounds the very edge you are trying to make flat, so flatten it regularly with a flattening plate or a sheet of coarse wet-and-dry paper on glass.
6.The technique, step by step
- Soak and set up. Stone soaked if it needs it, sitting on a damp cloth so it cannot slide. Keep the surface wet throughout — the slurry that forms is doing the cutting.
- Set the angle and commit to it. Consistency beats precision: a steady 17° produces a better edge than a wobbling 15°.
- Work one section at a time. Divide the blade into three — heel, middle, tip — and sharpen each before moving on. Trying to sweep the whole blade in one stroke is how beginners round the tip.
- Two fingers of pressure on the flat of the blade, pushing down just behind the edge. Not force — the abrasive does the work.
- Push away, lift, return. Cut on the push stroke, lift the blade off, come back. Dragging the edge backwards is a good way to roll it.
- Sharpen until a burr forms along the entire section — see the next chapter, this is the part that matters.
- Flip and repeat on the other side, same count of strokes, same angle.
- Move up a grit and repeat with lighter pressure.
- Finish with a few very light alternating strokes to remove the last of the burr.
7.The burr — the thing nobody explains
This is the single concept that separates people who sharpen from people who rub a knife on a stone and hope.
As you grind one side, metal is pushed off the very apex and folds over onto the far side, forming a microscopic wire along the edge called the burr. Its appearance is proof that you have ground all the way to the apex — that the two bevels finally meet. Until a burr forms, you have been sharpening the sides of the edge without ever reaching the edge itself, which is exactly why a knife can feel no sharper after twenty minutes of work.
How to find it. Do not run a finger along the edge. Instead, slide a fingertip away from the spine down over the edge, gently. On the un-ground side you will feel a faint catch, like the lip on a cut sheet of metal. That is the burr.
What to do with it. Once the burr runs along the whole length of one side, flip the knife and grind the other side until the burr flips over the other way. Then remove it: alternate single, very light strokes at your sharpening angle, three or four per side, decreasing pressure each time. Finish on a strop if you have one.
A burr left in place feels wickedly sharp for about ten seconds and then breaks off in use, leaving a ragged edge. This is why a knife can seem sharp straight off the stone and disappointing an hour later.
8.Stropping — the five minutes that keep it sharp
A strop is a strip of leather, sometimes loaded with fine abrasive compound. Drawing the blade backwards along it — spine first, edge trailing — aligns the very apex and removes any burr remnants.
Stropping does not sharpen; it maintains. Ten passes per side once a week keeps a sharpened knife in good order and pushes the interval between real sharpenings out considerably. If you have no strop, the back of a leather belt or even the rough side of a piece of cardboard works better than nothing.
For hard Japanese steel, a fine ceramic rod used very lightly is the other acceptable maintenance tool. Light is the operative word.
9.What never to use
- Pull-through sharpeners. Fixed carbide teeth set to a European angle. They tear steel out rather than abrading it, and they will reprofile a 15° edge into something blunter while gouging the blade. This is the fastest way to ruin a good knife.
- Electric sharpeners. Same wrong angle, plus heat. Enough friction heat will damage the temper of the steel — and a de-tempered blade cannot be fixed by sharpening.
- Ribbed honing steels. Designed to straighten soft edges. On 62 HRC steel they chip rather than align.
- The bottom of a mug. It technically abrades. It also has no angle control whatsoever.
If you would rather not learn stones, that is a perfectly reasonable position — take the knife to a professional sharpening service once a year. It is cheaper than replacing a blade you destroyed at home.
10.Sharpening by knife shape
The technique is the same. What changes is what goes wrong.
Nakiri — the easy one
A perfectly flat edge with no curve and no tip to manage. Keep the blade square to the stone, work in three sections, and you are done. If you are learning to sharpen, learn on a Nakiri.
Santoku — mind the front third
Flat through most of its length, then curving up towards the dropped tip. When you reach that curve, lift the handle slightly as you push so the edge stays in contact with the stone. Forgetting to do this is why so many Santokus end up sharp in the middle and dull at the tip.
Kiritsuke — mind the tip, seriously
Long and flat, so most of it is straightforward. The problem is the angled tip: it is fine, acute, and easy to grind away without noticing, which slowly turns a Kiritsuke profile into something rounder and less useful. Work the tip section deliberately, with fewer strokes than you think it needs.
If yours is single-bevel — rare on home-kitchen versions, common on traditional ones — the method is different: grind the bevelled side, then only remove the burr from the flat side, keeping that side dead flat against the stone. Never put a bevel on the flat.
Petty — small blade, sweeping motion
Mostly belly and very little flat, so you have to sweep: raise the handle progressively as you move from heel to tip so that the contact point travels along the curve. Because the blade is short and light, use noticeably less pressure — it is easy to over-grind a small knife.
11.Living with carbon steel
Aogami, Shirogami and other carbon steels ask for exactly one habit: dry the blade as you finish using it. Not after dinner. Not before bed.
- Wash by hand in warm water with a little dish soap. Rinse.
- Dry immediately with a soft cloth — including the ferrule and where the blade meets the handle, which is where rust likes to start.
- Never leave it in the sink, wet on a draining board, or standing in a bowl of water.
- Acidic foods — tomato, lemon, onion — react quickly. Rinse and wipe as you go if you are prepping a lot of them.
- Long storage: a thin film of camellia oil or food-safe mineral oil before putting the knife away for weeks.
Patina — not a problem
Within a few weeks the blade will darken: grey, blue-grey, sometimes warm brown. This is patina — a stable oxide layer formed as the steel reacts with food acids, and it protects the steel underneath. It is meant to happen. Many cooks encourage it deliberately by slicing an apple on day one and leaving the juice on for ten minutes.
Patina is even, adherent and smooth to the touch. It will not come off on food. Left alone, it deepens into the mottled grey that old carbon knives are prized for.
12.Living with stainless
Stainless is forgiving, not invincible. Three things still apply.
- Still not the dishwasher. Detergent is abrasive and alkaline, the drying cycle stresses the handle, and blades knock against other items. Stainless survives the chemistry; the edge does not survive the knocking.
- It can still spot. Salt, prolonged moisture and acidic residue will mark stainless given enough time. Drying is a good habit even here.
- It is harder to sharpen. The chromium carbides that make it stainless also resist abrasion. Expect to spend longer on the #1000 than you would with carbon — the burr takes more work to raise.
13.Rust — and how to tell it from patina

Removing rust. A wine cork dipped in a little baking soda, rubbed along the blade, lifts light rust in under a minute without scratching. A dedicated rust eraser works on heavier spots. For anything stubborn, a fine #3000 stone used flat on the blade face will take it off — but that is metal removal, so use it last.
Afterwards: dry thoroughly, then wipe with a drop of camellia oil. And work out why it happened, because rust is always a symptom — a knife left wet, a damp drawer, or a block that never dried out.
14.Boards and storage — where edges really die
More edges are destroyed between uses than during them.
Boards
- Best: end-grain wood. The fibres part around the edge and close again, so the blade sinks in rather than skidding.
- Good: edge-grain wood, or a soft synthetic board.
- Never: glass, stone, marble, ceramic or metal. One stroke on any of these can chip a hard edge — and a marble board will do it invisibly, dozens of times, until the knife just seems worse for no reason.
Storage
- Magnetic rack — good, if you place the blade on it rather than slapping it down.
- Knife block or in-drawer tray — good, provided both are dry.
- Wooden saya — the best option for a knife that is stored rather than used daily.
- Loose in a drawer — the worst. Blades knock against every other utensil each time it opens.
Whatever you choose, the knife goes in dry. A damp blade in a wooden block is how rust starts where you cannot see it.
15.Handles
Wood (Wa, magnolia, maple): wash and dry with the blade; never soak. Once or twice a year, a drop of food-safe mineral or camellia oil rubbed in with a cloth keeps it from drying out and cracking. If the wood ever feels fuzzy or looks pale and thirsty, it wanted oil a month ago.
Carbon fibre or resin: essentially maintenance-free. Wash, dry, done. Still not the dishwasher — the heat cycle stresses the bond between handle and tang.
On any handle, dry the ferrule join carefully. Water that sits in that seam is the most common source of rust on an otherwise well-kept knife.

17.The short version
Find out whether your steel rusts, and act accordingly — that decides your daily habits. Sharpen on a #1000 until a burr appears along the whole edge, refine on a #3000, remove the burr with light alternating strokes. Strop weekly. Cut on wood, store dry, and keep the knife out of the dishwasher and off anything harder than the food.
Do that and a good knife will outlive you. Skip it and the best steel in the world becomes a butter knife within two years.
